ZUCCHINI BREAD 
3 eggs
2 c. sugar
1/2 c. oil
2 c. grated squash
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1/2 c. nuts (optional)

Beat eggs, add sugar and oil, beat well. Add squash and beat. Add dry ingredients and mix. Add nuts and beat. Bake in two greased and floured loaf pans at 325 degrees for 1 hour.
