ZUCCHINI BREAD | |
3 eggs 2 c. sugar 2 tsp. vanilla 1 c. cooking oil 2 c. squash, ground 3 c. flour (unsifted) 1 tsp. baking soda 1/2 tsp. baking powder 1 tsp. salt 1 1/2 tsp. cinnamon 1 c. nuts, ground (Use large mixing bowl.) Beat together eggs and sugar; add oil, squash and vanilla. Sift together flour, baking soda, salt, baking powder and cinnamon. Add, using your large mixing spoon, all this together. Add nuts. Pour into 2 greased loaf pans or 3 small loaf pans. Bake at 325 degrees for 1 hour. |
