“SPICED APPLE QUICK BREAD” IS IN:

SPICED APPLE QUICK BREAD 
2 cups minus 2 tbsp. all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. ground cloves
1/4-1/2 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp. freshly grated nutmeg
1/2 cup melted butter or vegetable shortening
2 eggs, unbeaten
1/4 cut buttermilk, yogurt or sour cream
3/4 cup brown sugar (packed into measuring cup)
1 cup coarsely grated, cored and peeled raw apples
1/2 cup rolled wheat or oats or old-fashioned oatmeal
2 tbsp. wheat germ, wheat bran or oat bran (optional)

In a large mixing bowl, combine butter or shortening, sugar and eggs; beat well. Stir in grated apple and half the dry ingredients. Add wet ingredients and stir until mixed.

Add remaining ingredients and mix to combine well (about 20 seconds - do not overmix or it will become tough).

Bake in a buttered 9x5x3-inch loaf pan at 350°F for 55 to 60 minutes, or until a wooden toothpick inserted in center of loaf comes out clean.

Remove from pan and cool on wire rack for at least 20 minutes before slicing. Wrap tightly and store in a cool place.

Excellent recipe. I used canned apple cinnamon for a filling instead of fresh
cause thats what I had on hand. Substituted whole wheat on the flour and added some chopped hazelnuts. Perfect with a cup of hazelnut coffee on a cool fall day.
