YUMMY ZUCCHINI BREAD 
2 c. sugar
3 c. flour
2 c. grated squash
3 eggs
1 c. drained, crushed pineapple
3 tsp. cinnamon
1 c. oil
2 tsp. vanilla
1 tsp. salt
3/4 tsp. nutmeg
1/2 tsp. baking powder
2 tsp. baking soda
Raisins or nuts, optional

Combine in large bowl and mix. Bake at 350 degrees for 1 hour in bread pans. Makes 2 loaves. Delicious served with Cool Whip as a dessert!
