COD BAKE 
1 lb. cod fillets
1 tomato, sliced
1/4 onion, sliced thin
4 slices Swiss cheese
1/2 c. milk (must be at least 2%)

Layer cod fillets in greased Pyrex dish. Season with salt and pepper to taste. Layer tomato slices on top of cod fillets, then onion slices on top of tomato slices. Layer Swiss cheese on top of onions. Pour milk over layers and bake at 375 degrees for 20-30 minutes.

Love this recipe! Been playing with it. Due to lack of tomatoes the other night- used 1 can of Italian spiced diced tomatoes. Coated the baking dish with Pam butter spray, drizzle with olive oil, salt and pepper. Place fillets in the dish turn them a couple of time to coat. Ued twice as much onion. Use enough Swiss slices to cover the fillets. Served on top of whole wheat noodles spiced with pepper, o. oil, garlic and fresh curly parsley. Excellent.

This was delicious! My mom used to bake cod in milk all the time, so I was happy to see this twist on an old favorite. I used Trader Joe's frozen cod and it wasn't quite defrosted, so I added enough milk to go about halfway up the fish. I also used Trader Joe's 21 Seasoning Salute. I tried to just use two slices Jarlsberg, but about 20 minutes in I looked at it and it looked a little sparse, so I sprinkled shredded mozzarella over it and left it in long enough to melt and brown. (about 15 more min) My three teenage boys loved it!

Delicious! I added a sprinkle of bacon bits, and used fat free milk mixed with half and half. Will definitely make this again. Does NOT taste fishy.

Used basic recipe....then added suggestions from the rest of you! (tbs of butter w. 1% milk, dill). Loved it! My husband doesn't lk fish...but this one, Oh boy! Thank you all!

Amazing recipe! Some of the best fish I've ever eaten (we had Alaskan cod given by friends that fish there). I didn't have fresh tomatoes so I used a can of Fire Roasted Tomatoes with Garlic and wow! I DID use whole milk and it was so creamy. Yum!

Great dish. Didn't have swiss or 2%. Adjusted with Havarti and a pat of butter (with fat free milk). Added a pinch of dill and it was great. Probably would have been creamier with whole milk. But still good.

This recipe is amazing. I made it with cilantro orzo. I couldn't have been happier with the results. I cut it in half and the time was about 22 minutes. Really, Really good! thanks for putting it up.
