BLACKEYED PEA CASSEROLE 
1 to 1 1/2 lb. ground round
1 med. onion, chopped
3 can jalapeno blackeyed peas (2 drained, 1 not drained)
2 c. cooked Minute rice
1 c. Rotel tomatoes
1 lg. can tomato sauce
Salt and pepper
Grated cheese

Brown meat, add onion and cook until clear. In 13 x 9 inch baking dish mix all ingredients except cheese. Bake 30 to 40 minutes at 350 degrees. Top with cheese.
