PECAN BRITTLE | |
1 c. sugar 1/2 c. white corn syrup 1/2 c. water 1 c. pecans 1 tsp. butter 1 tsp. baking soda 1/2 tsp. water Mix sugar, syrup and water in heavy saucepan. Stir over low heat until sugar dissolves. Increase heat and bring to a boil. Cover and cook gently 5 minutes. Uncover and cook without stirring at 234 degrees (soft ball). Add pecans and butter and cook over low heat to 300 degrees (hard crack), stirring frequently. Remove from heat. Add baking soda and vanilla. Mix well. Pour into lightly buttered baking sheet, spreading thinly as possible. When cool, break into pieces. Store tightly covered. |
