SWEET POTATO BALLS 
3 c. cooked sweet potatoes
1/4 c. butter
3/4 c. brown sugar
2 tbsp. milk
1/4 tsp. salt
8 marshmallows
1 c. corn flakes
Chopped nuts, if desired

Mash potatoes and add butter, sugar, milk and salt. With tablespoon scoop out 1/4 cup of mixture; shape around marshmallow. Use more potatoes if needed to make ball. Roll each ball in crushed corn flakes. Place on buttered baking dish, cover with foil and freeze. When ready to serve, bake until marshmallows begin to ooze out. Bake 20 minutes at 325 degrees. Add nuts to sweet potatoes, if desired. Place around roast or turkey.
