SWEET POTATO BALLS 
3 c. cooked yam or sweet potatoes
1/4 tsp. salt
1/4 butter
3/4 c. brown sugar
8 marshmallows
1/2 tsp. grated lemon rind
2 tbsp. milk
1/2 c. crushed corn flakes

Mashed sweet potatoes. Add butter, sugar, milk, salt and lemon rind. With tablespoons, scoop up about 1/4 cup of mixture. Form the potatoes around a marshmallow to make a ball. Roll each ball in crushed corn flakes. Place in buttered baking dish or fit into medium muffin tin. Place a pat of butter on each ball and bake in a 350 degree oven until brown. Or they can be fried; just keep turning to brown evenly.
