SPICY TOMATO LENTILS | |
1 c. dried lentils 3 c. water 2 tbsp. oil 1 med. onion, chopped (1 1/2 c.) 1 tsp. minced garlic 1 tsp. cumin 1 tsp. seasoned salt 1 tsp. instant bouillon or one cube 1/4 tsp. pepper 1 can (16 oz.) stewed tomatoes Rinse and sort lentils. Put in large pot with water. Bring to boil, reduce heat. Cover and simmer 20 minutes until tender. Drain if necessary. Transfer to bowl. In same pan heat oil. Add onion, garlic and cumin. Cook over medium heat stirring occasionally (5 minutes) until onions are tender. Add lentils and remaining ingredients. Mix lightly then bring to a boil. Reduce heat, cover and simmer 15 minutes. Add water if necessary. |
