LENTIL TOMATO SOUP | |
2/3 c. dry lentils 4 c. water 1 onion, chopped 4 carrots, chopped 2 stalks celery, chopped 1 lg. can tomato puree 1 sm. can tomato paste Simmer lentils, vegetables and water in large pot 3 hours, replenishing water as needed. Add a little dry white wine if desired. Add small amounts of salt, pepper, chopped parsley, garlic, dill weed, thyme and tarragon. Add tomato puree and tomato paste and heat through. Serves 6. |
