LENTIL - TOMATO SOUP 
2/3 c. dried lentils
4 c. water
1 chopped onion
4 carrots, chopped
2 stalks celery, chopped
1 c. tomato paste
Chopped parsley
Garlic
Salt and pepper
Thyme
Dill weed
Tarragon
Dry white wine

Put first 5 ingredients into a large pot and simmer gently for about 3 hours, replenishing water as needed. Then, testing, add small amounts of herbs, spices, and wine to taste. Stir tomato paste and heat through.
