SUMMER SAUSAGE 
2 lb. lean ground beef
2 tbsp. Morton's tender quick
1/2 tsp. coriander seed, ground
1/2 tsp. onion salt
1/4 tsp. garlic powder
Several drops liquid smoke
1 c. water
Dash of nutmeg
2 tbsp. brown sugar

Mix well. Seal 2 inch diameter roll or rolls in foil. Seal both ends. Refrigerate 24 hours. Place in pan of boiling water. Boil 1 hour and let cool. Slice and eat.
