SALAMI OR SUMMER SAUSAGE 
2 lb. ground beef (cheap)
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
1 tbsp. liquid smoke
2 tbsp. Morton's Tender Quick (curing salt)
1 tbsp. mustard seed
3/4 c. water

Mix together well. Divide into 3 blobs. Roll like sausage and wrap in foil, sealing ends. Chill 24 hours.

Remove foil, bake on rack with drop pan to catch drippings, for 1 hour at 350 degrees. Let cool and wrap in foil again. Refrigerate and slice as needed. Good for camping or Christmas and New Year's party.
