SUMMER SAUSAGE 
3 lbs. good, lean, ground beef
1 tbsp. liquid smoke
1/4 tsp. pepper
1/2 tsp. onion powder
1/4 tsp. garlic powder
4 tbsp. tender quick salt (Morton's)
1 c. water
1 tsp. mustard seed

Mix all together well. Divide into 3 rolls, wrap in foil, placing shiny side of foil toward meat. Refrigerate 24 hours, then put in pan and cover with cold water. Simmer 1 hour. Drain, rewrap in new foil. Ready to eat when cooled, or may freeze for up to 6 months.
