BREADED CAULIFLOWER | |
1 head fresh cauliflower 1/4 c. olive oil 2 c. flavored bread crumbs 1/2 tsp. thyme Pinch of salt 1/2 tsp. coarse black pepper Remove layers of leaves and discard. Cut cauliflower into flowerettes, wash and boil them in salted water until tender. Drain. Then add cauliflower into bread crumb mixture. While cauliflower is cooking prepare the following: In deep large pot heat oil and add remaining ingredients. Saute breadcrumbs very lightly; it burns very quickly. No more than 4 to 5 minutes. When done, add cauliflower, remove from heat and stir carefully. Makes 4 servings. |
