HOT GERMAN POTATO SALAD 
6 to 7 potatoes (red is best)
6 slices slab bacon, med. thick, chopped
1 chopped onion

DRESSING:

3/4 to 1 c. water
2 to 3 tbsp. flour
1 to 2 tbsp. sugar
1/3 to 1/2 c. vinegar
1 tsp. salt
1 tsp. celery seed
Pepper

Boil, peel and cube potatoes. Saute bacon until crisp. Drain on paper towel. Pour off bacon grease reserving 2 to 3 tablespoons. Saute onion slightly. Add flour, salt, pepper, sugar. Stir until smooth. Add vinegar and water. Cook until slightly thick. Pour over potatoes, toss with bacon and celery seed.
