AUNT CATHY'S HOT GERMAN POTATO
SALAD
 
3 lbs. potatoes, diced & cooked
6 slices bacon
1/4 c. chopped onion
1 stalk celery, chopped
2 tbsp. flour
2 tbsp. sugar
2 tsp. salt
Dash pepper
3/4 c. water
1/3 c. tarragon flavored vinegar

Fry bacon crisp. Set aside the grease. Brown celery and onion in bacon grease. Stir in flour, sugar, salt and pepper until bubbly. Stir in water and vinegar. Heat until boiling. Stir constantly until it thickens. Mix with potatoes and serve.
