HOT GERMAN POTATO SALAD 
1/2 lb. bacon
1/2 c. chopped onion
2 tbsp. all-purpose flour
2 tbsp. sugar
1 1/2 tsp. salt
1 tsp. celery seed
Dash of pepper
1/2 c. vinegar
1 c. water
6 c. sliced cooked potatoes
2 tbsp. snipped parsley

Cook bacon until crisp; drain and crumble, reserving 1/4 cup fat. Cook onion in reserved fat until tender but not brown. Blend in flour, sugar, salt, celery seed, and pepper. Add vinegar and water. Cook and stir until mixture thickens and bubbles. Add crisp crumbled bacon and sliced potatoes. Heat thoroughly, tossing lightly. Sprinkle with snipped parsley. Makes 8 or 9 servings.
