VENISON SUMMER SAUSAGE 
2 lbs. venison hamburg
1 tbsp. Morton's Tender-Quick salt (optional)
1 1/2 tsp. salt
1 tsp. garlic powder
1 tsp. pepper
1 tsp. liquid smoke

Mix well. Make into 3 rolls. Wrap in wax paper. Chill 24 to 36 hours.
