RHUBARB COFFEE CAKE 
4 c. chopped rhubarb
3 eggs, beaten
2 c. sugar
2 tsp. cinnamon
1/2 c. oil
1 c. chopped nuts
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda

TOPPING:

3 tbsp. brown sugar
1 1/2 tsp. cinnamon

Mix rhubarb, eggs, sugar, cinnamon and nuts in a bowl. Mix dry ingredients, add to rhubarb mixture. Sprinkle top with brown sugar and cinnamon. Bake at 350 degrees for 45 to 55 minutes.
