IMPOSSIBLE COCONUT PIE 
4 eggs
1 level c. sugar
1 tsp. vanilla
2 c. milk
1/2 c. Bisquick
1/2 stick butter (room temperature)

Can put butter in microwave to soften also. Blend all ingredients in blender at medium speed for 5 minutes. Pour in 10 inch pie pan. Sprinkle over 1 cup coconut. This pie will make its own crust.

Bake in a preheated 350°F for 35 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.

35 mins was not nearly long enough to set the custard... I cooked for 45-55 mins.
