BROCCOLI SALAD WITH TOFU
DRESSING
 
3 cups broccoli florets
1/4 cup sunflower seeds (salted or unsalted will work)
1/4 cup raisins

DRESSING:

1/3 cup firm Silken tofu
3 tbsp. olive oil
3 tbsp. rice vinegar
3 tbsp. pure maple syrup

Bring large pot of water to a rolling boil.

Place broccoli florets in boiling water for 1 minute (this is supposed to be a crunchy broccoli salad).

Drain broccoli and immediately rinse with cold water to stop broccoli from cooking.

Using blender combine tofu, olive oil, rice vinegar and maple syrup. Process until mixture is smooth.

Allow broccoli to drain and air dry while making dressing.

Combine broccoli florets, raisins, and sunflower seeds - stir to coat.

Pour dressing over broccoli mixture and stir.

Cover with Saran or plastic wrap and refrigerate for at least one hour before serving.
