GREEN CASTLES (VEGGIE WHITE CASTLE-STYLE BURGERS) | |
1 lb. extra firm tofu 1 tbsp. Marmite (optional; small jar in international section) 1 tbsp. Asian fish sauce 1 tbsp. soy sauce 1 tsp. liquid smoke garlic powder, to taste salt and pepper, to taste vegetable oil 1 medium white onion cheap wavy hamburger pickles (sour) 10-12 small soft square rolls (potato rolls seem to work well) Thoroughly press tofu. Lay flat, slice in 4 chunks square-ish, which are then sliced into thin white castle shaped burger slices about 3/16-inch thick. That's pretty thin. Prepare marinade: Soy sauce, fish sauce, liquid smoke, Marmite, garlic powder. Add a splash of oil and hot water. Dissolve the Marmite well. Marinate tofu for several hours. Make certain for good contact with the liquid. All the liquid may be absorbed. Chop onion into 1/4-inch squares. COOK: In large skillet on medium high, sauté onion in oil until about half browned, push to edges. Place several of the tofu slices on the pan and brown one side. Set the temperature so they brown in about 3 minutes per side. Flip, add some cooked onions to the top of each and set the top and bottom halves of the buns on the pan to steam over the burgers and cooking onions. When the second side is done, take them off, add a couple of those cheap sour pickles, salt and pepper to taste (remember the marinade is super salty already) and enjoy! Submitted by: Blake |
