PEACH OF A PECAN PIE 
3 eggs
1/2 c. firmly packed brown sugar
1 c. peach preserves
1 c. pecan halves
2 tbsp. melted butter
1 (10 inch) unbaked pie shell

Beat eggs and brown sugar together. Add peach preserves and beat until blended, cutting any large pieces of fruit. Stir in pecans and melted butter.

Pour into pie shell and bake at 350 degrees for 40 minutes (until center is set). This is also good with apricot preserves.
