CABBAGE CASSEROLE 
1 cabbage head (1 1/2 to 2 lbs.), chopped
Water to cover
3 tbsp. butter
1/4 c. flour
1 c. whipping cream
1/2 c. milk
1/2 tbsp. salt
1/8 tbsp. white pepper
1/8 tbsp. red pepper
1/8 tbsp. nutmeg
2 tbsp. butter
Bread crumbs
Grated Parmesan cheese

Cook cabbage 7 minutes and drain. Melt butter. Blend flour with 3 tablespoons butter. Add cream and milk to butter and flour; stir until thickened. Stir in other ingredients, except bread crumbs, cheese, and 2 tablespoons butter. Remove from heat and mix with cabbage. Pour in 1 1/2 inch buttered dish. Drop with butter. Sprinkle with cheese and bread crumbs. Bake 20 minutes at 375 degrees.
