APPLE BLUEBERRY BREAD | |
1/2 cup butter, softened 1 cup sugar 2 eggs 1 cup applesauce 2 cups flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 to 1 cup fresh or dry pack frozen blueberries Preheat oven to 350°F. Grease and flour a 9x5 inch loaf pan. In a bowl, beat together butter, sugar and eggs. Stir in applesauce, then dry ingredients only until blended. Fold in blueberries. Spread in prepared pan. Bake 55 to 60 minutes or until bread tests done. Remove pan to wire rack to cool 10 minutes. Remove from pan and cool completely. Makes 1 loaf. Apple Raisin - 1 cup raisins instead of blueberries. Apple Nut - 1 cup nuts instead of blueberries. |
