CHICKEN, ONIONS & ZUCCHINI 
1 lb. chicken breasts, skinned, halved & boned
1 tbsp. chopped fresh ginger
3 tbsp. soy sauce
1 garlic clove, smashed & chopped
8 pearl onions, blanched
1 yellow pepper in bite-size pieces
8 sm. pieces zucchini
1 red pepper in bite-size pieces
4 lemon wedges
1 tbsp. oil
Salt & pepper

Cut chicken into 1/2 inch cubes. Place in bowl along with ginger, soy sauce and garlic; marinate 30 minutes in refrigerator. Drain chicken and reserve marinade. Alternate chicken, vegetables and lemon wedges on skewers. Place in oven-proof dish and season well. Baste with marinade and sprinkle with oil. Broil 8 minutes in oven 6 inches from top element. Turn skewers over once and baste with marinade twice.
