BEEF STROGANOFF 
4 tbsp. oil
27 oz. beef
Salt and pepper
2 oz. butter
9 oz. onions, sliced
13 oz. mushrooms, sliced
9 oz. tomatoes, peeled
1 pt. heavy cream
1/4 pt. sour cream
1 tbsp. mustard, brown
1 tbsp. lemon juice
1 tbsp. flour

Cut meat in small strips, brown in oil and season with salt and pepper. Take out of pan, keep warm. Use some of the frying oil, add butter and fry halved onion rings until golden, add sliced mushrooms and tomatoes. Stir well and season to taste with salt and pepper. Add heavy cream and cook for approximately 10 minutes. Mix together sour cream, mustard, and lemon juice. Add to mushroom mixture, add flour and stir vigorously. Add meat and heat thoroughly.
