PEANUT BUTTER COOKIES
1/2 c. vegetable shortening (non-hydrogenated) or butter
1/2 c. brown sugar, firmly packed
1 1/4 c. self-rising flour
1/4 tsp. baking soda
1 tsp. vanilla
1/2 c. white sugar
1 egg
1/2 c. peanut butter
1/4 tsp. baking powder

In a large bowl, combine shortening, peanut butter, sugar and egg. Beat until creamy. Gradually add dry ingredients. Stir in vanilla. Roll dough into walnut size balls. Place 2 inches apart on a lightly greased cookie sheet

Flatten with the tines of a fork, making a criss-cross pattern.

Bake in a preheated 375°F oven until cookies are set but not hard or crisp (about 10-12 minutes).

Makes about 3 dozen or more.
