LO FAT CRUNCHY CHICKEN BREASTS 
4 skinned chicken breasts
1 1/2 c. crushed Total cereal
1/2 c. oat bran
1 tsp. salt free lemon pepper
1/4 tsp. garlic powder
1/2 tsp. oregano
4-6 oz. fat free Italian dressing
Pam spray

Marinate chicken breasts in Italian dressing for about an hour. Mix dry ingredients and dip chicken breasts into it. Put on foil lined pan sprayed with Pam. Bake at 350 degrees for about 25 to 30 minutes.

Delicious, easy recipe. I made some slight adjustments based on what I had & personal taste. I halved the recipe easily since I didn't have enough chicken. I used corn flakes instead of Total and Grape Nuts instead of oat bran. This was a great combination but you can easily play around with different cereal combos. I used the lemon pepper and a few pinches of other herbs & spices (garlic & onion powder, Italian seasoning, dry mustard, cayenne). You can season the crumbs to your preference. This was easy to coat as I hate doing the egg/flour/breadcrumb method and actually think tastes better. I did the chicken for an hour in the dressing as this was a last minute meal but would do even longer next time if I have time. You could swap out the Italian dressing with Caesar, Greek, Vidalia Onion etc. After cooking, I put it under a low broiler very briefly to crisp it up right before serving. Served with rice pilaf & sauteed string beans it was a dish we all loved and can't wait to make again. This will be a new staple and the low fat/calorie aspect is an added bonus! No one will know it's healthy.
