PARMESAN CHEESE PUFFS 
These cheese puffs are delicious; they are like small souffles. They freeze well and can be reheated in the microwave.

1/4 c. milk
1/4 c. cool water
1/4 c. sweet butter
1/4 tsp. salt
1/2 c. flour
2 lg. eggs
1 c. Parmesan cheese
1/4-1/2 tsp. cayenne pepper, or to taste

Preheat the oven to 400°F.

Combine the milk, water, butter and salt in a heavy saucepan and bring the mixture to a boil over high heat.

Reduce heat to medium and add the flour all at once, beating the mixture with a wooden spoon until it leaves the side of the pan and forms a ball (similar to how you would make cream puffs).

Remove from heat, transfer to a bowl and whisk in the eggs, one at a time, beating well after each addition.

Stir in the Parmesan and cayenne.

Drop batter in mounds onto a buttered baking sheet and bake for about 20 minutes or until golden brown.

Makes 8 puffs as a side dish, or about 20 hors d'oeuvres.

Since microwave ovens vary in power, you may need to adjust your cooking time.
