NO CHOLESTEROL HONEY BRAN MUFFINS | |
Mazola No Stick corn oil cooking spray 1 c. unsifted flour (whole wheat or all-purpose) 1 c. whole bran cereal 1 1/2 tsp. baking powder 1/2 c. raisins 2 egg whites 1 c. skim milk 1/4 c. unsalted Mazola butter, melted 1/4 c. honey Spray 12 (2 1/2 x 1 1/4-inch) muffin cups with cooking spray. In large bowl, stir flour, bran cereal, baking powder and raisins. In small bowl, stir egg whites, milk, butter and honey until well blended. Stir into flour mixture just until moistened. Let stand 3 minutes. Spoon into muffin cups. Bake in 400 degree oven 15 to 20 minutes or until lightly browned. Makes 12 muffins. Each muffin provides: 3 g. protein, 24 g. carbohydrate, 1 g. polyunsaturated fat, 1 g. saturated fat, 0 mg. cholesterol, 140 mg. sodium and 140 calories. |
