CHICKEN-FRIED PORK CHOPS | |
12 good sized pork chops 6 eggs, beaten 9 tbsp. water 3/4 c. flour 2 1/4 c. cornmeal Season salt to taste (recipe below) Black pepper to taste Peanut oil for pan frying Whip the eggs with 9 tablespoons water to make an egg wash. Mix the remaining ingredients except the oil. Dip the chops into the egg wash and then into the coating mix. Pan fry in a bit of oil over medium heat until brown and done. Serves 12. SEASONING SALT: 3 tbsp. salt 1 tbsp. paprika 1 tbsp. celery salt 2 tsp. garlic powder 1 tsp. sugar 1 tsp. onion powder 1/2 tsp. cayenne 1/2 tsp. turmeric Mix together. Keep in a sealed jar. Makes 1/3 cup. |
