NEW ORLEANS SHRIMP CREOLE 
4 tbsp. butter
1 c. chopped onion
1 c. chopped celery
1/2 c. chopped green pepper
3 cloves garlic, minced
2 1/2 c. diced tomatoes
2 tbsp. chopped parsley
1 tsp. salt
1/4 tsp. cayenne pepper
3 bay leaves
3 c. water
3 lbs. shrimp
3 tbsp. flour mixed in cold water

Melt butter. Saute onion, celery, green pepper until soft. Add garlic and fry about 5 more minutes. Remove pan from heat and slowly stir in flour. Add parsley, bay leaves, salt, cayenne and tomatoes. Simmer 15 minutes, add shrimp. Cover and simmer 30 minutes. Serve over rice. Serves 6.
