SHRIMP NEW ORLEANS (FOR MICROWAVE) | |
1/2 c. butter, melted 1 1/2 c. onions 1/2 c. green pepper, chopped 1/2 c. celery, chopped 3 cloves garlic or as desired, minced 2 tbsp. flour 1/2 c. Bloody Mary Mix (no substitutes) 1/2 c. undiluted cream of celery soup 1 tsp. salt 1 lb. shrimp, peeled 1/2 tsp. cayenne pepper (optional) I substitute Creole Seasoning for salt, red pepper and Tabasco. It is available in most grocery stores Dash of lemon juice 1 1/2 pounds of unpeeled shrimp are better! In a 2 quart dish, melt butter and saute onion, pepper, celery and garlic on HIGH 15 minutes, covered. Stir and rotate twice. Stir in flour and Bloody Mary Mix. Add cream of celery soup and salt. Cover. Microwave on HIGH 5 minutes. Add shrimp, pepper and Tabasco. Microwave on high 6 to 8 minutes or until shrimp are pink and tender. Stir and test once or twice. It is easy to overcook shrimp in the microwave. Squeeze a small amount of lemon juice over all and serve over rice. |
