FRENCH SHRIMP CASSEROLE
(MICROWAVE)
 
4 green onions, sliced thin
1/2 c. chopped green pepper
1 clove garlic, minced
1 (6 oz.) can tomato paste
1/2 tsp. cayenne pepper
1/4 c. chopped celery
2 tbsp. butter
1 (16 oz.) can whole tomatoes
1 tsp. salt
1 (10 oz.) pkg. frozen shrimp

Put onion, celery, green pepper, butter and garlic in a 2-quart microwave dish or casserole. Cover and cook on high in microwave for 3 minutes, or until onions are transparent. Stir in remaining ingredients, cover and cook on medium for 5 minutes. Stir once, cover and cook on medium for 6 to 7 minutes. Let stand for 5 minutes and serve over rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
