SHRIMP SCAMPI - MICROWAVE 
1/2 c. butter
2 tbsp. dried parsley flakes
2 tbsp. lemon juice
2 lg. cloves garlic, minced
1/2 tsp. salt
1 lb. jumbo raw shrimp, cleaned
Paprika

Place butter in 2 quart casserole. Microwave high, 100% power until melted. Approximately 1-2 minutes. Stir in parsley flakes, lemon juice, garlic and salt. Add shrimp. Toss to coat. Cover.

Microwave high 100% power until shrimp are pink, opaque and tender. Approximately 3 1/2-5 minutes. Caution: Do not overcook shrimp as they will become tough. Stir 2 times. Sprinkle with paprika. Serve over 8 ounce of cooked linguine or spaghetti.

Since microwave ovens vary in power, you may need to adjust your cooking time.
