SHRIMP SALAD ALA NEW ORLEANS 
1 c. cold cooked rice
1 c. shrimp, cooked (cut up)
3/4 tsp. salt (I use less)
1 tbsp. lemon juice
1/4 c. sliced green pepper
1 tbsp. green onions
2 tbsp. French dressing
1 tbsp. chopped stuffed olives
3/4 c. raw cauliflower
1/3 c. mayonnaise
Canned asparagus

Enter all ingredients except mayonnaise and asparagus a few hours before serving. Fold in mayonnaise and place two strips of asparagus over each serving. Serves four.
