LIGHTER THAN AIR HUSH PUPPIES | |
1 c. self-rising cornmeal 1/2 c. self-rising flour 1 med. onion, chopped fine 1 tsp. catsup 2 oz. beer 1 egg Salt and pepper (liberal) Buttermilk (less than 1/2 pt.) Stir together above ingredients. Add buttermilk to make thick batter. Refrigerate for 30 minutes. Pour 1/2 to 1 inch oil in iron skillet. Spoon batter into hot oil. Fry until lightly browned. Place hush puppies in a warm styrofoam ice bucket to keep warm. Serve hot. If you don't happen to have beer on hand or if you are a teetotaler, then you may leave out the beer (hush puppies won't be as light), or you may use 1/2 envelope of yeast, dissolved in a small amount of warm water instead of the beer. (About 1/4 cup of water should be sued to dissolve the yeast in.) |
