BAKED HUSH PUPPIES 
1/3 c. yellow cornmeal
1/2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. sugar
1/8 tsp. red pepper
1 egg, beaten
1/3 c. evaporated skimmed milk
1/4 c. thinly sliced green onions
2 tbsp. vegetable oil
Vegetable cooking spray

Combine first 6 ingredients in a medium bowl; make a well in center of mixture. Combine egg, milk, green onions and oil; add to dry ingredients, stirring just until moistened. Spoon about 1 tablespoon batter into 1 1/2" muffin pans coated with cooking spray. Bake at 425 degrees for 15 to 20 minutes or until lightly browned. Remove from pans immediately. Yield: 1 1/2 dozen (51 calories per hush puppy).
