MINESTRONE SOUP 
1/2 onion, chopped
1 sm. potato, cubed
1 sm. carrot, sliced
1 tsp. oil
2 c. water
1/2 tsp. oregano
1/8 tsp. garlic powder
Salt & pepper
2 tsp. fresh or 1/2 tsp. dried parsley
1/2 zucchini, sliced
Other vegetables such as peas, green beans
1 c. canned tomatoes
2 oz. spaghetti, broken into pieces (or elbow macaroni)

1. Fry onion, potato and carrot in oil until onion is golden brown and soft.

2. Add water, oregano, garlic powder, salt and pepper and herbs. Boil gently for 15 minutes.

3. Add zucchini and boil gently for 15 more minutes.

4. Add beans, teammates and spaghetti or macaroni. Boil 12 to 15 minutes more until spaghetti or macaroni is just cooked. (Makes 4 servings about 1 cup each.)
