OATMEAL COOKIES 
1 c. flour, sifted
1/2 tsp. baking soda
1 1/2 c. reg. oats
2 egg whites, slightly beaten
1/4 tsp. cinnamon
1 c. brown sugar
1/3 c. oil
1/2 c. skim milk
2 tsp. vanilla
1 c. golden raisins

Sift together flour, soda, and cinnamon. Stir in oats. Combine egg whites, sugar, oil, milk, vanilla and raisins and add to flour mixture. Mix well. Drop batter a teaspoon at a time onto an oiled cookie sheet. Bake at 375 degrees 12-15 minutes. Shorter baking time results in a chewy soft cookie, the longer time in a crisp one. Recipe makes 3 dozen.
