MUSTARDY SAUSAGE SKILLET | |
Snip fresh chives or parsley to accent this simple family dish, a sort of hot potato salad with generous slices of frankfurters or smoked sausage. For 4 servings you will need: 4 med. size new potatoes (about 2 lb.) Boiling salted water 1 lg. onion, finely chopped 2 tbsp. butter 1 lb. frankfurters or cooked smoked sausage, sliced 1/2" thick 1 tbsp. Dijon-style mustard Salt to taste 1/2 c. whipping cream 2 med. tomatoes, chopped Snipped chives or parsley for garnish 1. Scrub potatoes. Cook in boiling salted water until tender, about 30 minutes. Drain. 2. Let potatoes stand until just cool enough to handle. Peel. Cut into 1 inch slices. 3. In a large frying pan cook onion in heated butter until soft. Add frankfurter slices. Cook, stirring often, until lightly browned. Mix in mustard, salt and cream. Bring to boiling. 4. Lightly mix in tomatoes and potatoes. Cover. Cook over medium heat until potatoes are heated through, 3-5 minutes. 5. Transfer to a warm serving dish. Sprinkle with chives or parsley. Good served with: Rye bread and a leafy green salad. For 2 servings: Half of the ingredients. For 8 servings: Double the ingredients but use only 3 tablespoons butter. |
