PICANTE SAUSAGE SKILLET | |
1 lb. smoked sausage (sliced) 1 1/2 c. long grain white rice 1 can stewed tomatoes (chopped) 1 tsp. salt 1 med. green pepper (chopped) 1 med. onion (chopped) 1 3/4 c. water 2/3 c. picante sauce 1/2 tsp. chili powder Cook sausage in 12 inch skillet over medium heat 2 minutes. Add onion, cook, stirring occasionally until tender, about 3 minutes. Drain off any excess grease. Add rice; mix well. Stir in remaining ingredients, except green pepper. Bring to a boil; reduce heat. Cover and simmer 20 minutes or until liquid is absorbed. Stir in green pepper. Remove from heat; let stand covered 5 to 10 minutes. Serve with picante sauce. Picante sauce may be reduced in recipe according to taste. Makes 6 to 8 servings. |
