APPLE JELLY 
4 c. apple juice (about 3 lbs. apples & 3 c. water)
2 tsp. lemon juice
3 c. sugar

Or 1 cup juice and 1 cup sugar.

Cook apples; strain juice. Measure apple juice in pan. (I use the bottom of my pressure cooker.) Add lemon juice and sugar. Stir well. Boil mixture until jelly strings from a spoon. Remove from heat. Skim off foam. Pour jelly into hot jars. May cover with paraffin wax. Adjust lids and seal.

Note: Do not make jelly when it is rainy weather.
