CALIFORNIA PILAF 
1 lb. ground beef
1/3 c. finely diced green pepper
2/3 c. finely diced onion
1/2 c. washed uncooked rice
1 1/2 tsp. salt
1/4 tsp. pepper
3/4 c. coarsely chopped ripe olives
2 c. hot water
3/4 c. tomato paste

Crumble beef and brown; place meat in greased casserole reserving fat. Cook pepper and onion in fat until limp and lightly browned. Add to meat, reserving fat. Brown rice, adding a little fat (more, if necessary) until lightly browned, stirring constantly. Stir rice, salt, pepper and olives into meat mixture. Mix water and tomato paste and pour over top. Bake at 350 degrees about 1 hour. Serves 6.
