CALIFORNIA PILAF | |
3 slices bacon 3 c. hot, cooked rice 1/4 c. chopped green onion 1 tsp. beef flavored broth 1 avocado, sliced and dipped in 2 tbsp. lemon juice 1 med. tomato, cut in wedges Black pepper Cook bacon until crisp. Remove and crumble. Reserve 1 teaspoon drippings. In serving bowl, toss hot rice with bacon, green onion, beef broth, and bacon drippings. Gently fold in tomato and avocado. Garnish with black pepper. Serve with broiled steaks, roast, or chicken. Makes 6 servings. |
