ROSS' BREAKFAST SKILLET
OK, hopefully you have a cast iron skillet. A 9-inch is best for this (that's what she said).

1/2 cup chopped peppers (stores sell a pre-cut mix that is very easy)
1/2 cup chopped onion (whatever you like)
1 tbsp. garlic (pre-minced is super easy)
butter (just a tab)
3 mushrooms, cut into quarters
1/2 pkg. pre-cooked pork sausage (Jimmy Dean or Johnsonville; 6 links)
1/2 diced tomato
4 eggs
1 cup grated sharp cheddar cheese, divided
salt and pepper, to taste
dash hot sauce
Italian seasoning, to taste (McCormick's)

Turn the oven on 350°F and the stove top to medium.

Put the butter in skillet until it melts. Then put in the peppers. While they are cooking, cut the mushrooms into quarters and cut the onion into small pieces. Put those, and the garlic in. Cut the tomato and sausage into small pieces and add those as well.

Turn the stove top down to medium low and stir in the Italian seasoning. Break 4 eggs in a bowl and scramble them. Add half of the cheese, just a dash of salt and pepper, and a dash of hot sauce.

Remove the pan from the heat and add the egg mixture to it. stir that all together until it is well mixed. Add the remaining cheese to the top, and put skillet in the oven at 350°F for 20 minutes.

I hope everyone will enjoy this, and remember, never use soap on an iron skillet!
