HEARTY SKILLET BREAKFAST | |
1/4 c. butter 1 lb. kielbasa sausage, skinned and cut into 1/4-inch slices 5 potatoes, peeled and sliced 1 onion, diced 1 tsp. salt 1/4 tsp. pepper 8 eggs, lightly beaten 2 tbsp. chopped parsley Melt butter in large skillet. Add sausage, potatoes, onion, salt and pepper. Cover. Cook over low heat, stirring frequently, until potatoes are tender. Pour eggs over potato-sausage mixture. Sprinkle with parsley. Continue cooking for 3-4 minutes or until eggs are set. Yield: 4-6 servings. |
